Is there a way I could receive a daily email for each or all my subscriptions. I love to read what is going on, but I'm having a hard time keeping up with individual threads/emails.

No, unfortunately there isn't. For me, the easiest way to keep up is to make either my forum subscriptions or thread subscriptions my entrance point to the forum and not use the email option at all.
